Vegetables beverages

At the Laboratory various preliminary experiments were carried out for the production of fruit-based vegetable beverages (apples, prickly pears).

From June 2019, thanks to the TIBEV project (PIF Cereal Bio – Tuscany Region), experiments will start on cereals-based beverages (or pseudo-cereals) and legumes-based, all from organic farming.
In particular, the tests will be carried out on different varieties of cereals, such as ancient grains, oats, millet, spelled, buckwheat, etc.
